From the kitchen to the tray: tackling food waste in UC canteens

For the 4th year in a row, as of 2023, the University of Coimbra is ranked the most sustainable higher education institution in Portugal and the 29th in the world, according to the Times Higher Education Impact Rankings, standing out once again in SDG 2 - Zero Hunger. This ranking was the motto for our conversation with Rui Rio back in 2021, veterinarian at the Hygiene and Health Inspection Office of the Social Services of the University of Coimbra (SASUC). We talked about what a veterinarian is responsible for in food management, good practices against food waste and raising awareness of the academic community regarding food preparation and consumption at the canteen of the University Stadium.
